High-quality knives are a lifetime investment, and should be treated accordingly. Sharpening a knife is best done in two stages, as this device does. First, the knife is moved back and forth about twenty times in slot one (numbered for quick reference). Diamond abrasives remove the old edge and create a new bevel. In slot two, finer diamond abrasives create a second bevel for strength, and polish the edge to a razor sharpness. Bright red rollers guide the blade as you push and pull to ensure the proper angle.

Lightweight, compact, and portable, the sharpener stores handily in a kitchen drawer and can be carried on a camping or hunting trip. The durable body is composed of engineering plastic that simply wipes clean. Designed with nonslip feet and a sure-grip handle for either right- or left-handed users, the manual sharpener measures 7 by 2-1/4 by 2 inches and is covered by a one-year warranty. I wasn't sure what product to buy to try to resurrect the knives in the kitchen in which I recently started cooking......the various stainless steel knives were all horribly dull. I followed the instructions provided with the Chef's Choice sharpener & voila! serviceable knives!!

I'm content.......

I purchased this but returned it nearly immediately in trade for a larger electric model by the same brand. Why? Because it was very difficult to begin to sharpen my knives on this unit, the first dozen or so passes on the rough side had the knife grabbing and sticking, and the effect of all this stop & go behavior was a very uneven beginning.

It's possible that had I proceeded I could have evened out the damage and all could have been fine; but everything I was seeing and feeling was telling me that this sharpener was ruining a good knife.

The shape of the edge of your knives will likely determine your experience with this sharpener. I feel that this was trying to do more reshaping to my edges than what it is intended for, so it didn't perform.

I have found this product to live up to its discription. I have
used it on several styles of knives and found it works with
very little effors and leaves your knives very sharp. I have
purchaced 2 additional sharpeners and plan to to give them
as gifts.

I can appreciate a great knife and a microscopically perfect edge. That's nowhere close to what I end up using on a day-to-day basis. I have a few decent Henckels knives and few "value" knifes. All do a good job when they are sharp. My guess is that's the same situation where 99% of the people reading this review find themselves. When one of the knives loses their edge, I can get it back in less than a minute with this sharpener. Then the knife is good for another few weeks. Cost: A few minutes of sharpening every couple of weeks. Benefits: Very usable knives. An inexpensive and fool-proof sharpener that's sort of a Zen pleasure to use. No cords or counter clutter. I'd recommend it to most any one. If you're looking to sharpen a set of knives forged by Ninja monks and passed down through the generations, why are you reading reviews for a $20 knife sharpener? Go to a professional. Also, if many of your knives have ruined edges, it'll be too much work to get back to a decent edge with this sharpener. A pro or one of the mechanical sharpeners might be a better bet.
